- Cook the pasta until al dente according to the package directions. Drain, rinse with cold water to stop the cooking, and let it cool completely.
- Make the dressing: whisk (or shake in a jar) extra virgin olive oil and red wine vinegar with lemon juice, minced garlic, fresh oregano, fresh dill, salt, and black pepper until emulsified. Add Dijon mustard if using.
- Prep the mix-ins: dice cucumbers, halve cherry tomatoes, slice red onion, and prepare Kalamata olives. Crumble feta and chop fresh herbs.
- For extra flavor, toss the drained pasta with a small splash of dressing while it’s still slightly warm. Let it cool fully before adding the rest of the ingredients.
- Assemble: in a large bowl, combine cooled pasta with tomatoes, onion, olives, herbs, and feta. Add enough dressing to coat (save some if making ahead). Mix gently.
- Chill to let flavors meld. If making ahead, add cucumbers and the remaining dressing right before serving. Serve slightly chilled (not ice-cold) and season to taste.
Notes
Make-ahead: This pasta salad tastes even better the next day. Hold back about half the dressing and add it just before serving to keep everything fresh. Add cucumbers right before serving if making ahead (they can release water).
