- First, in a large bowl, combine the lemon juice, olive oil, garlic, oregano, basil, thyme, salt, and black pepper.
- Next, add the chicken cubes to the bowl and mix well to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

- Also, skewer the chicken and vegetables, alternating between the chicken, red onion, bell pepper, and zucchini.

Notes
For a more authentic flavor, use wooden skewers that have been soaked in water for at least 30 minutes before grilling. This prevents them from burning. You can also marinate the chicken overnight for even more flavor.
