Greek Chicken Souvlaki

Ingredients
  

  • 1 lb boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup fresh lemon juice
  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 red onion cut into 1-inch pieces
  • 1 large bell pepper cut into 1-inch pieces
  • 1 small zucchini cut into 1-inch pieces

Method
 

  1. First, in a large bowl, combine the lemon juice, olive oil, garlic, oregano, basil, thyme, salt, and black pepper.
  2. Next, add the chicken cubes to the bowl and mix well to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Then, preheat your grill or grill pan to medium-high heat.
  4. Also, skewer the chicken and vegetables, alternating between the chicken, red onion, bell pepper, and zucchini.
  5. Now, place the skewers on the grill and cook for about 5 minutes on each side, or until the chicken is cooked through and the vegetables are tender.
  6. So, remove the skewers from the grill and let them rest for a few minutes before serving.
  7. Plus, serve the Greek Chicken Souvlaki with pita bread, tzatziki sauce, and a side of Greek salad.

Notes

For a more authentic flavor, use wooden skewers that have been soaked in water for at least 30 minutes before grilling. This prevents them from burning. You can also marinate the chicken overnight for even more flavor.
