Gooey Strawberry Earthquake Cake

Ingredients
  

  • 1 box strawberry cake mix
  • 1/2 cup unsalted butter melted
  • 1 cup shredded coconut
  • 1 cup chopped pecans
  • 1 package 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries sliced
  • 1/4 cup milk
  • 1/2 teaspoon salt

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. Step 2: Spread the shredded coconut and chopped pecans evenly on the bottom of the prepared baking dish.
  3. Step 3: In a large bowl, prepare the strawberry cake mix according to package instructions, then pour it over the coconut and pecans.
  4. Step 4: In a separate bowl, beat the cream cheese until smooth, then gradually add in the powdered sugar and vanilla extract.
  5. Step 5: Dollop the cream cheese mixture over the cake batter, using a knife to swirl it gently.
  6. Step 6: Arrange the sliced strawberries on top of the batter.
  7. Step 7: Drizzle the melted butter evenly over the entire cake.
  8. Step 8: Bake in the preheated oven for 50 minutes, or until the edges are golden brown and the center is set.
  9. Step 9: Allow the cake to cool slightly before serving to let it set but still gooey.
