Garlic Butter Scallops

Ingredients
  

  • 12 large scallops
  • 4 tbsp unsalted butter softened
  • 2 cloves garlic minced
  • 1/4 cup white wine
  • 1/4 cup chicken broth
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp grated Parmesan cheese

Method
 

  1. Rinse the scallops under cold water and pat them dry with paper towels.
  2. Season the scallops with salt and pepper.
  3. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the scallops and sear for 2-3 minutes on each side, until they're golden brown. Remove the scallops from the skillet and set them aside.
  4. In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and cook for 1 minute, until fragrant.
  5. Add the white wine, chicken broth, and lemon juice to the skillet. Bring the mixture to a simmer and cook for 2-3 minutes, until it's slightly reduced.
  6. Stir in the Parmesan cheese and cook for an additional minute, until the sauce is smooth and creamy.
  7. Return the scallops to the skillet and spoon the garlic butter sauce over the top of each scallop.
  8. Serve the scallops hot, garnished with parsley and lemon wedges if desired.

Notes

To ensure the scallops cook evenly, make sure they're patted dry before seasoning and searing. You can also serve the Garlic Butter Scallops with rice, pasta, or roasted vegetables for a well-rounded meal.
