Method
- Step 1: Preheat your oven to 200°C (390°F) and place a large baking tray inside.
- Step 2: In a frying pan over medium heat, add the vegetable oil and cook the sausages for about 10 minutes, turning occasionally.
- Step 3: Add the bacon to the pan and cook until crispy, about 5 minutes. Remove both the sausages and bacon and place them in the oven to keep warm.
- Step 4: In the same pan, add the mushrooms and cook for 3-4 minutes until golden brown. Set aside.
- Step 5: Place the halved tomatoes, cut side up, on the tray in the oven. Season with salt and pepper.
- Step 6: In a small saucepan, heat the baked beans over low heat, stirring occasionally.
- Step 7: In another frying pan, melt the butter and fry the eggs until the whites are set but the yolks remain runny.
- Step 8: Toast the slices of bread until golden brown.
- Step 9: If using, fry the black pudding slices for 2 minutes on each side until crispy.
- Step 10: Assemble the breakfast on plates, dividing the ingredients evenly, and serve hot.
Notes
For a vegetarian version, skip the bacon and sausages and add more mushrooms and tomatoes.
