Ingredients

Method
 

  1. Peel the bananas and slice them into ½-inch thick rounds. Arrange the slices in a single layer on a parchment-lined baking sheet. Freeze for at least 30 minutes until firm.
  2. Melt the chocolate using a double boiler (a heatproof bowl over simmering water), stirring constantly until glossy and smooth. Alternatively, microwave in 30-second bursts, stirring between each. If the chocolate seizes, stir in a teaspoon of coconut oil to smooth it out. Remove from heat.
  3. Remove the frozen banana slices from the freezer and let them sit at room temperature for about 5 minutes. Using a fork, cradle each slice and dip it into the melted chocolate, coating completely. Let excess chocolate drip off, then place back on the parchment-lined baking sheet. Add any toppings (chopped nuts, coconut flakes, sea salt) immediately before the chocolate sets.
  4. Return the baking sheet to the freezer for 30 minutes to 1 hour until the chocolate is fully set and snaps when you bite in. Transfer to an airtight container, layering between sheets of parchment paper to prevent sticking. Store in the freezer for up to 2 months. Pull out 5–10 minutes before serving for the best texture.
