French Onion Pasta

Ingredients
  

  • 12 oz pasta of your choice e.g., pappardelle or fettuccine
  • 2 large onions thinly sliced
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup beef broth
  • 1 cup grated parmesan cheese
  • 1/2 cup grated mozzarella cheese
  • 1/4 cup all-purpose flour
  • 2 cloves garlic minced
  • 1 cup cooked beef e.g., ground beef or sliced roast beef

Method
 

  1. Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente, then set aside.
  2. In a large skillet, melt the butter over medium heat and add the sliced onions, cooking for 20-25 minutes or until they are caramelized and golden brown.
  3. Add the minced garlic to the skillet and cook for 1-2 minutes, stirring constantly to prevent burning.
  4. Sprinkle the flour over the onions and garlic, stirring to combine, and cook for 1 minute.
  5. Gradually pour in the beef broth, whisking continuously to avoid lumps, and bring the mixture to a simmer.
  6. Reduce the heat to low and let the sauce simmer for 5-7 minutes or until it has thickened slightly.
  7. Stir in the cooked beef, parmesan cheese, and mozzarella cheese, and let the cheese melt and the sauce combine.
  8. Add the cooked pasta to the skillet, tossing to combine with the sauce and cheese.

Notes

For an extra rich and creamy sauce, add 1/4 cup of heavy cream or half-and-half towards the end of the simmering time. You can also customize the dish with your choice of protein, such as cooked chicken or sausage, and add some sautéed mushrooms or bell peppers for extra flavor and nutrients.
