Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat chicken dry and season both sides with salt and pepper. Arrange on one side of the baking sheet.
- Toss broccoli florets with olive oil, salt, and pepper. Spread on the other side of the baking sheet.
- In a bowl, mix softened butter, garlic, lemon zest, lemon juice, Dijon mustard, smoked paprika, red pepper flakes, and parsley to make the cowboy butter.
- Spread half the cowboy butter mixture over the chicken breasts, reserving the rest for serving.
- Bake for 20-25 minutes until chicken reaches 165°F (74°C) and broccoli is tender-crisp.
- Let chicken rest 5 minutes, then drizzle with remaining cowboy butter before serving.
Notes
Store leftovers in an airtight container for up to 3 days. For extra flavor, marinate chicken in half the cowboy butter for 30 minutes before baking.
