- Step 1: Season the chicken thighs generously with salt and black pepper on both sides.
- Step 2: Heat the olive oil in a large skillet over medium-high heat. Sear the chicken thighs until golden brown, about 3-4 minutes per side. Transfer to the crockpot.
- Step 3: In the same skillet, add the sliced onions and cook until caramelized, about 10 minutes. Stir in the garlic, thyme, and rosemary, cooking for an additional minute.
- Step 4: Deglaze the skillet with the beef broth and white wine, scraping up any browned bits. Stir in the Worcestershire sauce.
- Step 5: Pour the onion mixture over the chicken in the crockpot. Cover and cook on low for 6 hours.
- Step 6: About 10 minutes before serving, sprinkle the shredded Gruyere cheese over the chicken. Cover and let it melt.
- Step 7: Garnish with chopped fresh parsley before serving.
Notes
For a richer flavor, you can substitute the beef broth with beef consommé. Serve with crusty bread or mashed potatoes.
