Crockpot Cheesy Chicken & Potatoes

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1.5 lbs baby potatoes halved
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp butter
  • 2 tbsp chopped fresh parsley

Method
 

  1. Step 1: Place the halved potatoes at the bottom of the crockpot.
  2. Step 2: Season the chicken breasts with paprika, salt, and pepper, then place them on top of the potatoes.
  3. Step 3: In a small bowl, mix the chicken broth, diced onion, and minced garlic. Pour this mixture over the chicken and potatoes.
  4. Step 4: Cover and cook on low for 6 hours, or until the chicken is cooked through and the potatoes are tender.
  5. Step 5: Remove the chicken and potatoes from the crockpot and set aside.
  6. Step 6: Stir in the sour cream and shredded cheddar cheese into the remaining broth in the crockpot until the cheese is melted and the sauce is creamy.
  7. Step 7: Return the chicken and potatoes to the crockpot, gently stirring to coat them in the cheesy sauce.
  8. Step 8: Serve hot, garnished with fresh parsley.

Notes

For extra flavor, add a sprinkle of crushed red pepper flakes before serving.
