Crockpot BBQ Chicken & Potatoes

Ingredients
  

  • 2 lbs boneless skinless chicken thighs
  • 2 lbs baby potatoes halved
  • 1 large yellow onion sliced
  • 1 cup BBQ sauce divided
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt

Method
 

  1. Step 1: Season chicken thighs with salt, pepper, smoked paprika, garlic powder, and onion powder on both sides.
  2. Step 2: Place halved baby potatoes in the bottom of your crockpot in an even layer.
  3. Step 3: Add sliced onions over the potatoes, then place seasoned chicken thighs on top.
  4. Step 4: In a small bowl, whisk together 3/4 cup BBQ sauce, brown sugar, apple cider vinegar, and Worcestershire sauce.
  5. Step 5: Pour the BBQ sauce mixture evenly over the chicken and potatoes.
  6. Step 6: Cover and cook on LOW for 6 hours or HIGH for 3-4 hours, until chicken shreds easily and potatoes are tender.
  7. Step 7: Remove chicken and shred with two forks, then return to crockpot.
  8. Step 8: Stir in remaining 1/4 cup BBQ sauce and let sit for 5 minutes before serving.
  9. Step 9: Serve hot with your favorite sides like coleslaw or cornbread.

Notes

For extra flavor, sear chicken thighs in a skillet for 2-3 minutes per side before adding to crockpot. Choose baby potatoes that are similar in size for even cooking.
