Crispy Reuben Roll-Ups

A fun twist on the classic Reuben sandwich, these roll-ups are crispy, cheesy, and packed with flavor.

Ingredients
  

  • 8 slices of deli-style corned beef
  • 8 slices of Swiss cheese
  • 1/2 cup sauerkraut drained
  • 1/4 cup Thousand Island dressing
  • 8 egg roll wrappers
  • 1 egg beaten
  • 2 tbsp butter melted
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Method
 

  1. Step 1: Lay out the egg roll wrappers on a clean surface.
  2. Step 2: On each wrapper, place a slice of corned beef, a slice of Swiss cheese, a tablespoon of sauerkraut, and a drizzle of Thousand Island dressing.
  3. Step 3: Fold the sides of the wrapper over the filling, then roll tightly from the bottom to the top, sealing the edges with the beaten egg.
  4. Step 4: Preheat a skillet over medium heat and brush with melted butter.
  5. Step 5: Place the roll-ups seam side down in the skillet and cook for 2-3 minutes on each side until golden brown and crispy.
  6. Step 6: Sprinkle with garlic powder, onion powder, salt, and pepper while cooking.
  7. Step 7: Remove from skillet and let cool for a minute before serving.
  8. Step 8: Serve with extra Thousand Island dressing for dipping.

Notes

For extra crispiness, you can bake the roll-ups in the oven at 400°F for 10-12 minutes instead of frying.
