- Step 1: Season the chicken breasts with salt and pepper on both sides.
- Step 2: Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken and set aside.
- Step 3: In the same skillet, add the chopped onion and cook for 3-4 minutes, or until translucent.
- Step 4: Add the minced garlic and cook for 1 minute, stirring frequently to prevent burning.
- Step 5: Pour in the diced tomatoes and bring to a simmer. Let it cook for 5 minutes, stirring occasionally.
- Step 6: Stir in the heavy cream, dried basil, and dried oregano. Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer for 10 minutes, or until the sauce thickens slightly.
- Step 7: Return the chicken to the skillet, spooning the sauce over the top. Cover and cook for 5 minutes, or until the chicken is heated through.
- Step 8: Sprinkle the chopped fresh basil and grated Parmesan cheese over the top. Serve immediately with your favorite side dish.
Notes
For a healthier option, you can use half-and-half instead of heavy cream.
