Creamy Pesto Shrimp Orzo (One Pot)

Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • cups orzo pasta
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 3 cups chicken broth
  • ½ cup heavy cream
  • cup basil pesto
  • ½ cup grated Parmesan cheese
  • 1 cup cherry tomatoes halved
  • 2 tbsp butter
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Method
 

  1. Season shrimp with salt and pepper. Heat 2 tablespoons olive oil in a large pot over medium-high heat.
  2. Add shrimp to the pot and cook for 2-3 minutes per side until pink and cooked through. Remove shrimp and set aside.
  3. Add remaining 1 tablespoon olive oil to the same pot. Sauté minced garlic for 30 seconds until fragrant.
  4. Add orzo pasta to the pot and toast for 1-2 minutes, stirring frequently.
  5. Pour in chicken broth and bring to a boil. Reduce heat to medium and simmer for 10-12 minutes, stirring occasionally, until orzo is tender.
  6. Stir in heavy cream, pesto, and butter. Mix until well combined and creamy.
  7. Add cherry tomatoes and cooked shrimp back to the pot. Toss gently to combine.
  8. Remove from heat and stir in Parmesan cheese. Season with additional salt and pepper if needed.
  9. Serve immediately garnished with fresh basil leaves and extra Parmesan cheese if desired.

Notes

For best results, use fresh basil pesto. You can substitute vegetable broth for a lighter version. Leftovers keep in the refrigerator for up to 3 days.
