Method
- Melt butter in a large pot over medium heat. Add diced onion and cook until softened, about 3 minutes.
- Add minced garlic and cook 30 seconds until fragrant. Stir in dry orzo and toast for 1 minute.
- Pour in chicken broth and milk. Bring to a simmer, then reduce heat to medium-low. Cook for 8 minutes, stirring occasionally.
- Place broccoli florets on top of the orzo (do not stir). Cover and steam for 3 minutes.
- Remove from heat. Stir in cheeses until fully melted and creamy. Season with nutmeg, salt, and pepper.
Notes
For extra creaminess, add an additional slice of American cheese. Leftovers reheat well with a splash of milk to refresh the texture.
