Method
- Set up your equipment (food processor or blender). Drain the olives well so the spread doesn’t get watery. Keep the feta cold for the thickest, creamiest texture.
- Add the feta to the food processor and pulse until crumbly.
- Add green olives, garlic, and lemon juice. Blend just until combined, scraping down the sides as needed.
- With the machine running, drizzle in the olive oil slowly to emulsify into a creamy, velvety spread. Blend about 1–2 minutes total, stopping as soon as it’s smooth.
- Taste and adjust: add more lemon for brightness, pepper as needed, and chili flakes or fresh herbs if using. If too thick, add 1 teaspoon olive oil (or water) to loosen.
- Serve in a shallow bowl with swirls on top. Finish with a drizzle of olive oil, herbs, and a few olives. Serve with crackers, pita, or veggies.
Notes
Texture tip: Blend the feta first, then add olives and seasonings, and drizzle olive oil in slowly for the creamiest consistency. Don’t over-blend or the spread can turn thin/gummy. Customize it: add chili flakes for heat, fresh herbs (dill/parsley/mint) for brightness, or extra lemon for tang.
