Creamy Crack Chicken Pinwheels

Ingredients
  

  • 3 cups cooked chicken breast shredded
  • 8 oz cream cheese softened
  • 1/2 cup mayonnaise
  • 1 packet 1 oz ranch dressing mix
  • 8 strips bacon cooked and crumbled
  • 1 1/2 cups sharp cheddar cheese shredded
  • 1/4 cup green onions finely chopped
  • 6 large flour tortillas 10-inch
  • 2 tablespoons fresh chives chopped
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Method
 

  1. Step 1: In a large mixing bowl, combine softened cream cheese, mayonnaise, and ranch dressing mix until smooth and well blended.
  2. Step 2: Add shredded chicken, crumbled bacon, 1 cup of cheddar cheese, green onions, chives, garlic powder, and black pepper to the cream cheese mixture. Stir until everything is evenly combined.
  3. Step 3: Lay tortillas flat on a clean work surface. Spread about 3/4 cup of the chicken mixture evenly over each tortilla, leaving a 1/2-inch border around the edges.
  4. Step 4: Sprinkle remaining cheddar cheese over the chicken mixture on each tortilla.
  5. Step 5: Starting from one end, tightly roll each tortilla into a log shape. Wrap each roll individually in plastic wrap.
  6. Step 6: Refrigerate the wrapped rolls for at least 2 hours or overnight to firm up and make slicing easier.
  7. Step 7: Remove plastic wrap and using a sharp knife, slice each roll into 1-inch thick pinwheels.
  8. Step 8: Arrange pinwheels on a serving platter and serve immediately, or refrigerate until ready to serve.

Notes

For best results, use a rotisserie chicken for convenience. These pinwheels can be made up to 24 hours ahead and stored covered in the refrigerator. If tortillas crack while rolling, warm them slightly in the microwave for 10-15 seconds.
