- Step 1: Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper.
- Step 2: Add chicken to the skillet and cook until golden brown on both sides, about 5-7 minutes per side. Remove chicken from skillet and set aside.
- Step 3: In the same skillet, add corn, onion, and garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Step 4: Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet.
- Step 5: Stir in heavy cream and bring to a simmer. Let it cook for 2-3 minutes until slightly thickened.
- Step 6: Return the chicken to the skillet, spooning some of the sauce over the top.
- Step 7: Sprinkle Parmesan cheese over the chicken and cover the skillet. Reduce heat to low and simmer for 5 minutes.
- Step 8: Garnish with fresh parsley before serving. Enjoy your creamy corn chicken skillet!
