Method
- Step 1: Cook the pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water before draining.
- Step 2: While the pasta cooks, add avocados, garlic, basil, Parmesan cheese, lemon juice, and olive oil to a food processor or blender.
- Step 3: Blend until smooth and creamy. If the sauce is too thick, add 1-2 tbsp of reserved pasta water.
- Step 4: Season the sauce with salt and pepper to taste.
- Step 5: Toss the cooked pasta with the avocado sauce until well-coated. Add more reserved pasta water if needed to achieve your desired consistency.
- Step 6: Serve immediately, garnished with red pepper flakes or extra Parmesan cheese if desired.
Notes
For a vegan version, omit the Parmesan cheese or use a plant-based alternative.
