Creamy Avocado Lime Chicken

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 ripe avocados pitted and peeled
  • 1/2 cup Greek yogurt
  • 1/4 cup fresh lime juice about 2 limes
  • 1/4 cup chopped cilantro
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Lime wedges for serving

Method
 

  1. Step 1: Season chicken breasts generously with salt, pepper, cumin and chili powder on both sides.
  2. Step 2: Heat olive oil in large skillet over medium-high heat. Cook chicken for 6-7 minutes per side until golden and cooked through (165°F internal temp). Remove and let rest.
  3. Step 3: While chicken cooks, blend avocados, yogurt, lime juice, cilantro, garlic, 1/2 tsp salt and 1/4 tsp pepper in food processor until smooth.
  4. Step 4: Thin sauce with 1-2 tbsp water if needed - it should be pourable but thick like salad dressing.
  5. Step 5: Slice rested chicken diagonally and arrange on platter. Spoon generous amounts of avocado sauce over top.
  6. Step 6: Garnish with extra cilantro leaves and lime wedges. Serve immediately with rice or roasted veggies.

Notes

For extra flavor, marinate chicken in lime juice and spices for 30 minutes before cooking. Sauce will oxidize slightly - press plastic wrap directly on surface if making ahead. Best eaten day-of.
