Corned Beef Colcannon Casserole

Ingredients
  

  • 2 cups cooked corned beef chopped
  • 4 cups mashed potatoes
  • 1 cup shredded cabbage
  • 1/2 cup chopped green onions
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup butter melted
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. Step 2: In a large bowl, combine mashed potatoes, melted butter, milk, salt, pepper, and garlic powder.
  3. Step 3: Stir in chopped green onions and shredded cabbage until well mixed.
  4. Step 4: Gently fold in the chopped corned beef.
  5. Step 5: Spread the mixture evenly into the prepared baking dish.
  6. Step 6: Sprinkle shredded cheddar cheese over the top of the casserole.
  7. Step 7: Bake in the preheated oven for 30-35 minutes, until the top is golden brown and bubbly.
  8. Step 8: Allow the casserole to cool for a few minutes before serving.

Notes

For extra flavor, try adding a pinch of nutmeg to the mashed potato mixture.
