- Step 1: Heat olive oil in a large pot over medium heat. Add onion and sauté for 3-4 minutes until translucent.
- Step 2: Stir in garlic, carrots, and celery. Cook for another 5 minutes until vegetables begin to soften.
- Step 3: Add cabbage and cook for 3 minutes, stirring occasionally.
- Step 4: Pour in beef broth and add potatoes, corned beef, thyme, and bay leaf. Bring to a boil.
- Step 5: Reduce heat to low, cover, and simmer for 25-30 minutes until potatoes are tender.
- Step 6: Remove bay leaf and season with salt and pepper to taste.
- Step 7: Ladle into bowls and serve hot with crusty bread if desired.
Notes
For extra flavor, use leftover corned beef from St. Patrick's Day. The soup tastes even better the next day as flavors meld.
