Classic Cheese Fondue

A rich and creamy cheese fondue perfect for dipping bread and veggies.

Ingredients
  

  • 1 garlic clove halved
  • 1 cup dry white wine
  • 1 tablespoon lemon juice
  • 8 ounces Gruyère cheese grated
  • 8 ounces Emmental cheese grated
  • 1 tablespoon cornstarch
  • 1 tablespoon kirsch cherry brandy, optional
  • Pinch of nutmeg
  • Pinch of black pepper
  • 1 baguette cubed
  • Assorted vegetables such as broccoli and carrots, for dipping

Method
 

  1. Step 1: Rub the inside of a fondue pot with the halved garlic clove; discard garlic.
  2. Step 2: Add wine and lemon juice to the pot and bring to a gentle simmer over medium heat.
  3. Step 3: Gradually stir in the Gruyère and Emmental cheeses, a handful at a time, until melted.
  4. Step 4: In a small bowl, mix cornstarch and kirsch until smooth. Stir into the cheese mixture.
  5. Step 5: Continue to cook, stirring constantly, until the mixture is smooth and bubbling.
  6. Step 6: Season with nutmeg and black pepper to taste.
  7. Step 7: Reduce heat to low. Serve immediately with cubed bread and vegetables for dipping.

Notes

For a non-alcoholic version, substitute wine with apple cider and omit kirsch.
