Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked white rice
  • 1/2 cup fresh cilantro chopped
  • 1/4 cup fresh lime juice from about 2 limes
  • 1/4 cup sliced avocado
  • 1/4 cup diced red bell pepper

Method
 

  1. Step 1: In a large bowl, mix the shrimp with olive oil, cumin, smoked paprika, garlic powder, salt, and black pepper.
  2. Step 2: Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side until pink and cooked through.
  3. Step 3: While the shrimp is cooking, prepare the rice if it’s not already cooked.
  4. Step 4: In a small bowl, mix the fresh cilantro and lime juice to make the cilantro-lime dressing.
  5. Step 5: To assemble the bowls, divide the cooked rice evenly among four bowls.
  6. Step 6: Top each bowl with the cooked shrimp, sliced avocado, and diced red bell pepper.
  7. Step 7: Drizzle the cilantro-lime dressing over the top of each bowl.
  8. Step 8: Serve immediately and enjoy the burst of flavors!

Notes

For an extra kick, add a sprinkle of red pepper flakes or a dash of hot sauce.
