- First, in a small bowl, whisk together olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, and pepper.
- Then, rub the chicken breasts with the spice mixture, ensuring they are evenly coated.
- Next, preheat your grill to medium-high heat. Grill the chicken for 6-8 minutes per side, or until cooked through and the internal temperature reaches 165°F (74°C).
- After that, let the chicken rest for 5 minutes before dicing or shredding it.
- While the chicken is grilling, prepare the pineapple salsa. In a medium bowl, combine the diced pineapple, red onion, jalapeño, cilantro, lime juice, and minced chipotle peppers.
- Stir the salsa well to combine all the flavors. Taste and adjust seasoning as needed.
- Warm the tortillas according to package instructions. You can warm them in a dry skillet, in the microwave, or over an open flame.
- Finally, assemble the tacos. Fill each tortilla with the grilled chicken and top with the pineapple salsa.

Notes
For extra smoky flavor, use a charcoal grill. You can also add a dollop of sour cream or Greek yogurt to the tacos for added richness.
