Ingredients
  

  • 1 lb boneless skinless chicken breasts, diced
  • 2 poblano peppers roasted and chopped
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 tbsp olive oil
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1/2 cup shredded Monterey Jack cheese
  • Fresh cilantro for garnish

Method
 

  1. Step 1: Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned, about 5 minutes.
  2. Step 2: Add diced onion and minced garlic to the pot. Sauté until softened, about 3 minutes.
  3. Step 3: Stir in chopped roasted poblano peppers, cumin, smoked paprika, salt, and pepper.
  4. Step 4: Pour in chicken broth and bring the mixture to a simmer. Cook for 10 minutes.
  5. Step 5: Reduce heat to low and stir in heavy cream. Let the soup warm through without boiling.
  6. Step 6: Ladle the soup into bowls and top with shredded Monterey Jack cheese and fresh cilantro.
  7. Step 7: Serve warm with crusty bread or tortilla chips on the side.

Notes

For extra spice, add a diced jalapeño with the poblano peppers. You can also use rotisserie chicken to save time!
