Method
- Preheat a large skillet over medium-high heat. Add olive oil and butter.
- Season chicken breasts with salt, pepper, dried basil, and dried oregano.
- Place chicken breasts in the skillet and cook for 5-6 minutes on each side until golden and cooked through.
- Remove chicken from the skillet and set aside. Add minced garlic to the skillet and sauté for 1 minute.
- Pour in heavy cream and bring to a simmer. Add grated Parmesan cheese and stir until melted and smooth.
- Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- Return chicken breasts to the skillet and spoon the sauce over them. Squeeze lemon juice over the top.
- Cook for an additional 2-3 minutes to allow the flavors to meld together.
- Serve hot with a side of your choice, garnished with extra Parmesan and lemon wedges.
Notes
For a healthier version, you can use half-and-half instead of heavy cream. Store leftovers in an airtight container in the refrigerator for up to 3 days.
