Chicken Florentine

A classic dish featuring tender chicken breasts atop a bed of spinach and a creamy garlic sauce.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup fresh spinach
  • 1/2 cup heavy cream
  • 2 cloves garlic minced
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 1 lemon juiced

Method
 

  1. Preheat a large skillet over medium-high heat. Add olive oil and butter.
  2. Season chicken breasts with salt, pepper, dried basil, and dried oregano.
  3. Place chicken breasts in the skillet and cook for 5-6 minutes on each side until golden and cooked through.
  4. Remove chicken from the skillet and set aside. Add minced garlic to the skillet and sauté for 1 minute.
  5. Pour in heavy cream and bring to a simmer. Add grated Parmesan cheese and stir until melted and smooth.
  6. Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  7. Return chicken breasts to the skillet and spoon the sauce over them. Squeeze lemon juice over the top.
  8. Cook for an additional 2-3 minutes to allow the flavors to meld together.
  9. Serve hot with a side of your choice, garnished with extra Parmesan and lemon wedges.

Notes

For a healthier version, you can use half-and-half instead of heavy cream. Store leftovers in an airtight container in the refrigerator for up to 3 days.
