Chicken Caesar Sandwich

Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 slices sourdough bread
  • 1/2 cup shredded romaine lettuce
  • 1/4 cup Caesar dressing
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp lemon juice
  • 1 tsp Worcestershire sauce
  • 1 tbsp butter for toasting

Method
 

  1. Season chicken breasts with olive oil, garlic powder, salt, and pepper.
  2. Grill chicken over medium heat for 5-6 minutes per side until cooked through.
  3. Let chicken rest for 5 minutes, then slice into thin strips.
  4. Toast bread slices in a buttered skillet over medium heat until golden brown.
  5. In a bowl, toss romaine lettuce with Caesar dressing, Parmesan, lemon juice, and Worcestershire sauce.
  6. Layer chicken slices on one piece of toasted bread.
  7. Top with dressed lettuce mixture and second bread slice.
  8. Cut sandwiches in half and serve immediately.

Notes

For extra flavor, add 1 minced garlic clove to the dressing. Store leftovers in fridge for up to 2 days (dressing may make bread soggy).
