Ingredients

  • 2 lbs red or Yukon Gold potatoes sliced 1/4 inch thick
  • 1 lb smoked kielbasa or andouille sausage sliced
  • 1 packet 1 oz ranch dressing mix
  • 1/2 cup sour cream
  • 1 cup whole milk
  • 2 cups sharp cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • Salt and black pepper to taste
  • 2 tablespoons butter for greasing

Method

  1. Preheat oven to 375°F and grease a 9x13 inch baking dish with butter.
  2. Wash and slice potatoes into 1/4 inch rounds, leaving skins on.
  3. In a large skillet, lightly brown the sliced sausage over medium heat for 3-4 minutes.
  4. In a bowl, whisk together ranch packet, sour cream, and milk until smooth.
  5. Layer half the potatoes in the prepared dish, season with salt and pepper.
  6. Add half the sausage over potatoes, then pour half the ranch mixture over top.
  7. Sprinkle half the combined cheeses over the layer.
  8. Repeat layers with remaining potatoes, sausage, ranch mixture, and cheese.
  9. Cover tightly with foil and bake for 45 minutes.
  10. Remove foil and bake 15-20 minutes more until cheese is golden and potatoes are tender.
  11. Let rest 10 minutes before serving.

Notes

For best results, use waxy potatoes like red or Yukon Gold. Fresh shredded cheese melts better than pre-shredded. Can be made ahead and refrigerated overnight before baking.
