Ingredients
  

  • 4 boneless skinless chicken breasts (6 oz each)
  • 2 large ripe avocados sliced
  • 1 cup cherry tomatoes halved
  • 1/4 red onion thinly sliced
  • 1/4 cup fresh cilantro chopped
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste

Method
 

  1. Step 1: Preheat your grill to medium-high heat and lightly oil the grates to prevent sticking.
  2. Step 2: Pat chicken breasts dry and pound to even 3/4-inch thickness between plastic wrap or parchment paper.
  3. Step 3: Mix 2 tablespoons olive oil, garlic powder, paprika, cumin, 1 teaspoon salt, and 1/2 teaspoon pepper in a bowl.
  4. Step 4: Rub the spice mixture all over chicken breasts and let marinate for 10 minutes at room temperature.
  5. Step 5: Grill chicken for 5-6 minutes per side until internal temperature reaches 165°F, then rest for 5 minutes.
  6. Step 6: Whisk together remaining olive oil, lime juice, honey, and a pinch of salt for the vinaigrette.
  7. Step 7: Slice the rested chicken and arrange on plates with avocado slices, cherry tomatoes, and red onion.
  8. Step 8: Drizzle the lime vinaigrette over everything and garnish with fresh cilantro before serving immediately.

Notes

Choose avocados that yield slightly to pressure but aren't mushy. You can substitute chicken thighs for extra juiciness, just cook to 175°F internal temperature.
