Cajun Chicken Alfredo

Ingredients
  

  • 1 lb boneless skinless chicken thighs
  • 2 tbsp homemade Cajun seasoning divided
  • 3 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 1/2 cups heavy cream
  • 1 cup freshly grated Parmigiano-Reggiano
  • 12 oz fettuccine
  • 1/2 cup reserved pasta water
  • Salt to taste
  • Chopped parsley for garnish

Method
 

  1. Cook pasta al dente in salted water, reserving 1/2 cup pasta water before draining.
  2. Pat chicken dry and toss with 1 tbsp Cajun seasoning. Melt butter in large skillet over medium heat.
  3. Add remaining seasoning to butter and cook 30 seconds until fragrant. Add chicken and cook 5 minutes per side until browned. Remove and let rest.
  4. In same skillet, sauté garlic 30 seconds. Add cream and 1/4 cup pasta water, simmer 2 minutes.
  5. Gradually whisk in parmesan until smooth. Slice chicken and add to sauce with cooked pasta.
  6. Toss everything together, adding more pasta water as needed for sauce consistency. Garnish with parsley.

Notes

For homemade Cajun seasoning: Mix 2 tbsp paprika, 1 tbsp each garlic powder, onion powder, and dried oregano, 2 tsp thyme, 1 tsp cayenne (adjust to taste), and 1 tsp black pepper. Store extra in airtight container.
