Butter Lemon Bowtie Chicken with Broccoli

Ingredients
  

  • 8 oz bowtie pasta
  • 1 lb boneless skinless chicken breast, cut into bite-sized pieces
  • 2 cups broccoli florets
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 lemon zested and juiced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes optional
  • 2 tablespoons chopped fresh parsley

Method
 

  1. Step 1: Cook the bowtie pasta according to package instructions. Drain and set aside.
  2. Step 2: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook until golden and cooked through, about 6-8 minutes. Remove from skillet and set aside.
  3. Step 3: In the same skillet, add 1 tablespoon of olive oil and the broccoli florets. Sauté for 3-4 minutes until bright green and tender-crisp. Remove from skillet and set aside.
  4. Step 4: Reduce the heat to medium and add the butter to the skillet. Once melted, add the minced garlic and cook until fragrant, about 1 minute.
  5. Step 5: Stir in the lemon zest and juice, and season with salt, pepper, and red pepper flakes if using.
  6. Step 6: Return the chicken and broccoli to the skillet, tossing to coat in the butter lemon sauce.
  7. Step 7: Add the cooked pasta to the skillet, along with the Parmesan cheese. Toss everything together until well combined and heated through.
