Method
- Heat olive oil in a large pot over medium heat. Sauté onions, celery, and garlic until soft.
- Add Old Bay seasoning and stir to coat the vegetables.
- Pour in white wine and simmer for 2 minutes.
- Add seafood stock and bring to a gentle boil. Simmer for 10 minutes.
- Stir in half-and-half and warm through.
- Gently fold in crab meat and cook until heated.
- Garnish with parsley and thyme. Serve hot.
Notes
For a lighter version, substitute half-and-half with whole milk or coconut milk.
