- In a medium saucepan, combine the blueberries, sugar, and water. Bring to a boil over medium heat, stirring occasionally.
- Reduce the heat to low and let the mixture simmer for about 5 minutes, until the blueberries have burst and the syrup has thickened slightly.
- Remove from heat and let the mixture cool for about 10 minutes. Strain the mixture through a fine-mesh sieve into a bowl, pressing on the solids to extract as much liquid as possible. Discard the solids.
- Stir in the lemon juice, lemon zest, and salt until well combined. Add the ice cubes and stir until they are mostly melted.
- Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions, usually about 20-25 minutes, until it reaches a sorbet consistency.
- Transfer the sorbet to a freezer-safe container and freeze for at least 2 hours, or until firm.

Notes
For a more intense blueberry flavor, you can use frozen blueberries instead of fresh. If you don't have an ice cream maker, you can freeze the mixture in a shallow container, stirring every 30 minutes until it reaches the desired consistency.
