Biscuits-Topped Skillet Turkey Chili

Ingredients
  

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 1 can 15 oz kidney beans, drained
  • 1 can 15 oz diced tomatoes
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1 cup chicken broth
  • 1 tube 16 oz refrigerated buttermilk biscuits

Method
 

  1. Step 1: Preheat oven to 375°F. Heat olive oil in large oven-safe skillet over medium heat.
  2. Step 2: Add ground turkey, breaking it up with a spoon. Cook until no pink remains, about 5 minutes.
  3. Step 3: Stir in onion, bell pepper and garlic. Cook until vegetables soften, about 4 minutes.
  4. Step 4: Mix in kidney beans, tomatoes, chili powder, cumin, paprika and chicken broth. Simmer for 10 minutes.
  5. Step 5: While chili simmers, separate biscuit dough into individual biscuits.
  6. Step 6: Arrange biscuits over chili in skillet, spacing them evenly.
  7. Step 7: Bake for 15-18 minutes until biscuits are golden brown and cooked through.
  8. Step 8: Let cool 5 minutes before serving. Biscuits will soak up some chili juices.

Notes

For extra flavor, brush biscuits with melted butter before baking. Leftovers keep well refrigerated for 3 days.
