Bang Bang Salmon Bites Bowls

Ingredients
  

  • 1 lb wild-caught salmon cut into 1-inch pieces
  • 1/3 cup mayo
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tsp rice vinegar
  • 1/2 tsp garlic powder
  • 2 cups cooked jasmine rice
  • 1 cup shredded carrots
  • 1 cup cucumber slices
  • 1/2 cup edamame
  • 2 tbsp sesame seeds
  • 2 green onions sliced
  • Lime wedges for serving

Method
 

  1. Preheat air fryer to 400°F or oven to 425°F.
  2. In a bowl, whisk together mayo, sweet chili sauce, sriracha, rice vinegar, and garlic powder to make the Bang Bang sauce.
  3. Toss salmon pieces in half of the sauce until coated.
  4. Arrange salmon in air fryer basket or on a lined baking sheet. Cook for 8-10 minutes (air fryer) or 12-15 minutes (oven), flipping halfway through.
  5. Assemble bowls with rice, salmon, carrots, cucumber, and edamame. Drizzle with remaining sauce, sprinkle with sesame seeds and green onions, and serve with lime wedges.

Notes

For a vegetarian option, use tofu or tempeh instead of salmon.
