Balsamic Caprese Chicken Skillet

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 8 oz fresh mozzarella sliced
  • 1/4 cup fresh basil leaves chopped
  • 1/4 cup balsamic vinegar
  • 1 tbsp honey

Method
 

  1. Step 1: Season chicken breasts with salt and pepper on both sides.
  2. Step 2: Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until golden brown.
  3. Step 3: Remove chicken from skillet and set aside. In the same skillet, add minced garlic and sauté for 30 seconds.
  4. Step 4: Add cherry tomatoes to the skillet and cook for 2-3 minutes until softened.
  5. Step 5: Return chicken to the skillet and top each breast with mozzarella slices. Cover and cook for 3-4 minutes until cheese melts.
  6. Step 6: In a small saucepan, combine balsamic vinegar and honey. Simmer over medium heat for 5 minutes until slightly thickened.
  7. Step 7: Sprinkle chopped basil over the chicken and drizzle with the balsamic glaze.
  8. Step 8: Serve immediately and enjoy!

Notes

For extra flavor, marinate the chicken in balsamic vinegar for 30 minutes before cooking.
