Method
- Step 1: Season chicken breasts with salt and pepper on both sides.
- Step 2: Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until golden brown.
- Step 3: Remove chicken from skillet and set aside. In the same skillet, add minced garlic and sauté for 30 seconds.
- Step 4: Add cherry tomatoes to the skillet and cook for 2-3 minutes until softened.
- Step 5: Return chicken to the skillet and top each breast with mozzarella slices. Cover and cook for 3-4 minutes until cheese melts.
- Step 6: In a small saucepan, combine balsamic vinegar and honey. Simmer over medium heat for 5 minutes until slightly thickened.
- Step 7: Sprinkle chopped basil over the chicken and drizzle with the balsamic glaze.
- Step 8: Serve immediately and enjoy!
Notes
For extra flavor, marinate the chicken in balsamic vinegar for 30 minutes before cooking.
