Balsamic Caprese Chicken

Ingredients
  

  • 4 boneless skinless chicken breasts (6-8 oz each)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 8 oz fresh mozzarella cheese sliced
  • 2 large tomatoes sliced 1/4 inch thick
  • 1/3 cup balsamic vinegar
  • 2 tablespoons honey
  • 1/4 cup fresh basil leaves
  • 2 tablespoons butter

Method
 

  1. Step 1: Preheat oven to 400°F. Pound chicken breasts to even 3/4-inch thickness and pat dry with paper towels.
  2. Step 2: Season both sides of chicken with salt, pepper, garlic powder, and Italian seasoning.
  3. Step 3: Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown.
  4. Step 4: Remove skillet from heat. Top each chicken breast with 2-3 mozzarella slices and 2-3 tomato slices.
  5. Step 5: Transfer skillet to preheated oven and bake for 12-15 minutes until chicken reaches 165°F internal temperature.
  6. Step 6: Meanwhile, combine balsamic vinegar and honey in a small saucepan. Simmer over medium heat for 8-10 minutes until reduced by half.
  7. Step 7: Remove from heat and whisk in butter until smooth and glossy.
  8. Step 8: Remove chicken from oven and let rest 3 minutes. Top with fresh basil leaves and drizzle with balsamic glaze before serving.

Notes

For extra flavor, marinate chicken in olive oil and Italian seasoning for 30 minutes before cooking. Fresh mozzarella works best, but you can substitute with provolone or fontina cheese.
