Method
- Preheat the oven to 350 F and grease a 9-inch round cake pan
- In a medium bowl, whisk together the all-purpose flour, almond flour, sugar, baking powder, and salt
- In a large bowl, using an electric mixer, beat the butter until creamy, then add the eggs one at a time, beating well after each addition
- Gradually add the dry ingredients to the butter mixture, alternating with the vanilla extract, beginning and ending with the dry ingredients
- Gently fold in the fresh raspberries
- Pour the batter into the prepared pan and smooth the top
- Sprinkle the sliced almonds over the top of the cake
- Bake for 40 minutes, or until a toothpick inserted into the center comes out clean
Notes
To ensure the cake is fully cooked, check the edges and top for a golden brown color, and the center should be set. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Store at room temperature for up to 3 days.
