- Step 1: Preheat your air fryer to 360°F (180°C). Cut the tops off the bell peppers and remove all seeds and membranes, creating hollow shells.
- Step 2: Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for 3-4 minutes until softened.
- Step 3: Add ground beef to the skillet and cook for 5-6 minutes, breaking it apart with a spoon until browned and cooked through.
- Step 4: Stir in minced garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
- Step 5: Remove from heat and mix in cooked rice, drained diced tomatoes, and 3/4 cup of shredded cheese until well combined.
- Step 6: Stuff each bell pepper with the beef and rice mixture, packing it down gently but firmly.
- Step 7: Place stuffed peppers in the air fryer basket, standing upright. Cook for 12 minutes at 360°F.
- Step 8: Top each pepper with remaining cheese and cook for an additional 3-4 minutes until cheese melts and peppers are tender.
- Step 9: Remove carefully with tongs and let cool for 2-3 minutes before serving. Garnish with fresh chopped parsley.
Notes
Choose peppers that can stand upright on their own. If peppers tip over, trim a small slice from the bottom to create a flat base. Leftover stuffed peppers keep in the refrigerator for 3 days and reheat well in the air fryer at 350°F for 3-4 minutes.
