- In a large pot, heat olive oil over medium heat. Add diced onion and cook until soft, about 5 minutes. Add garlic and sauté for 1 more minute.
- Add ground beef and chorizo. Cook until browned and crumbled, draining excess fat if needed.
- Stir in diced tomatoes, tomato sauce, kidney beans, black beans, chili powder, cumin, smoked paprika, salt, and pepper. Mix well.
- Pour in beef broth and bring to a simmer. Reduce heat and cook uncovered for 30–40 minutes, stirring occasionally, until thickened.
- Serve hot with your favorite toppings like shredded cheese, sour cream, or green onions.
Notes
Make it spicier by adding diced jalapeños or a pinch of cayenne. Tastes even better the next day. Serve with cornbread, rice, or over baked potatoes. Freezes well for up to 3 months.
