Beef and Chorizo Chili - Easy homemade recipe

Ingredients
  

  • 1 lb lean ground beef
  • 1/2 lb chorizo sausage (casings removed)
  • 1 onion (diced)
  • 3 cloves garlic (minced)
  • 1 can diced tomatoes (28 oz)
  • 1 can tomato sauce (15 oz)
  • 1 can kidney beans (15 oz, drained and rinsed)
  • 1 can black beans (15 oz, drained and rinsed)
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup beef broth
  • 1 tbsp olive oil

Method
 

  1. In a large pot, heat olive oil over medium heat. Add diced onion and cook until soft, about 5 minutes. Add garlic and sauté for 1 more minute.
  2. Add ground beef and chorizo. Cook until browned and crumbled, draining excess fat if needed.
  3. Stir in diced tomatoes, tomato sauce, kidney beans, black beans, chili powder, cumin, smoked paprika, salt, and pepper. Mix well.
  4. Pour in beef broth and bring to a simmer. Reduce heat and cook uncovered for 30–40 minutes, stirring occasionally, until thickened.
  5. Serve hot with your favorite toppings like shredded cheese, sour cream, or green onions.

Notes

Make it spicier by adding diced jalapeños or a pinch of cayenne. Tastes even better the next day. Serve with cornbread, rice, or over baked potatoes. Freezes well for up to 3 months.
