Ingredients
  

  • 1 bunch radishes (thinly sliced)
  • 1 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 tsp fresh parsley (chopped, optional)

Equipment

Method
 

  1. Wash and thinly slice radishes using a sharp knife or mandoline.
  2. In a bowl, whisk together lemon juice, olive oil, salt, and pepper to make the dressing.
  3. Add sliced radishes to the bowl and toss to coat evenly in the vinaigrette.
  4. Top with chopped parsley if desired and serve immediately.

Notes

Best served immediately to preserve the crunch. You can add sliced cucumbers, feta cheese, or chopped herbs like dill or chives for extra flavor. Great as a BBQ side or light lunch with grilled fish.
