- Preheat oven to 425°F (220°C). Peel sweet potatoes and slice into thick 2-inch rounds.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear sweet potato rounds for 3-4 minutes per side until golden brown.
- Add butter, garlic, thyme, salt, and pepper to the pan. Let the butter melt and spoon over the potatoes to coat.
- Pour in broth and transfer skillet to the oven. Roast for 25–30 minutes, or until potatoes are tender and liquid has mostly reduced.
- Remove from oven and serve hot, spooning pan sauce over the top for extra flavor.
Notes
Try swapping thyme with rosemary or sage for a different flavor profile. For extra caramelization, baste with the butter sauce halfway through roasting. Great with holiday roasts or as a fancy everyday side!
