Ingredients
  

  • 2 large sweet potatoes (peeled and cut into 2-inch rounds)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic (smashed)
  • 1 cup vegetable broth (or chicken broth)
  • 2 sprigs fresh thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Preheat oven to 425°F (220°C). Peel sweet potatoes and slice into thick 2-inch rounds.
  2. Heat olive oil in an oven-safe skillet over medium-high heat. Sear sweet potato rounds for 3-4 minutes per side until golden brown.
  3. Add butter, garlic, thyme, salt, and pepper to the pan. Let the butter melt and spoon over the potatoes to coat.
  4. Pour in broth and transfer skillet to the oven. Roast for 25–30 minutes, or until potatoes are tender and liquid has mostly reduced.
  5. Remove from oven and serve hot, spooning pan sauce over the top for extra flavor.

Notes

Try swapping thyme with rosemary or sage for a different flavor profile. For extra caramelization, baste with the butter sauce halfway through roasting. Great with holiday roasts or as a fancy everyday side!
