- Step 1: Bring a large pot of salted water to boil and cook penne pasta according to package directions until al dente, about 10-12 minutes.
- Step 2: While pasta cooks, heat olive oil in a large skillet over medium-high heat.
- Step 3: Add chicken sausage to skillet, breaking it up with a wooden spoon, and cook for 4-5 minutes until browned.
- Step 4: Add diced onion and sliced bell pepper to the skillet and cook for 2-3 minutes until softened.
- Step 5: Stir in minced garlic and Italian seasoning, cooking for 30 seconds until fragrant.
- Step 6: Add drained diced tomatoes and chicken broth, then simmer for 2 minutes.
- Step 7: Drain pasta and add it to the skillet along with fresh spinach, tossing until spinach wilts.
- Step 8: Remove from heat, stir in Parmesan cheese, and season with salt and pepper to taste.
- Step 9: Divide into 4 meal prep containers and refrigerate for up to 4 days.
Notes
Reheat in microwave for 1-2 minutes, adding a splash of water if needed. You can substitute any short pasta shape for the penne.
