Ingredients
  

  • 12 oz penne pasta
  • 1 lb Italian chicken sausage casings removed
  • 1 large red bell pepper sliced
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 5 oz fresh baby spinach
  • 1 can 14.5 oz diced tomatoes, drained
  • 1/2 cup chicken broth
  • 1/3 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste

Method
 

  1. Step 1: Bring a large pot of salted water to boil and cook penne pasta according to package directions until al dente, about 10-12 minutes.
  2. Step 2: While pasta cooks, heat olive oil in a large skillet over medium-high heat.
  3. Step 3: Add chicken sausage to skillet, breaking it up with a wooden spoon, and cook for 4-5 minutes until browned.
  4. Step 4: Add diced onion and sliced bell pepper to the skillet and cook for 2-3 minutes until softened.
  5. Step 5: Stir in minced garlic and Italian seasoning, cooking for 30 seconds until fragrant.
  6. Step 6: Add drained diced tomatoes and chicken broth, then simmer for 2 minutes.
  7. Step 7: Drain pasta and add it to the skillet along with fresh spinach, tossing until spinach wilts.
  8. Step 8: Remove from heat, stir in Parmesan cheese, and season with salt and pepper to taste.
  9. Step 9: Divide into 4 meal prep containers and refrigerate for up to 4 days.

Notes

Reheat in microwave for 1-2 minutes, adding a splash of water if needed. You can substitute any short pasta shape for the penne.
