2 cups mixed winter greens (kale, spinach, or arugula)
1 cup roasted butternut squash cubes
1/2 cup thinly sliced red onion
1/2 cup crumbled goat cheese
1/3 cup dried cranberries
1/4 cup toasted walnuts
2 tablespoons olive oil
1 tablespoon balsamic vinegar
Salt and pepper to taste
1. Preheat oven to 400°F (200°C). Toss butternut squash with olive oil, salt, and pepper. Roast for 25 minutes until caramelized.
