These Two Ingredient Cottage Cheese Tots are crispy, cheesy, and secretly packed with cauliflower—an easy, high-protein snack or side made with just cottage cheese and cauliflower rice.
12 oz fresh or frozen cauliflower rice (thawed if frozen)
1 cup cottage cheese (full-fat, low-fat, or fat-free)
Optional add-ins: salt, garlic powder, oregano, black pepper
Optional: cooking spray
1. Preheat oven to 425°F (convection) or 450°F (conventional). Line a baking sheet with parchment paper.
2. Heat a nonstick skillet over medium-high heat. Add cauliflower rice and cook 3–5 minutes until tender.
3. Transfer cauliflower to paper towels (or a clean towel) and squeeze out as much moisture as possible. Let cool slightly.
4. Blend cottage cheese in a blender or food processor until smooth.
5. In a bowl, mix drained cauliflower rice with the blended cottage cheese. Add any optional seasonings if desired.
6. Scoop rounded tablespoons of mixture, shape into tots, and place on the prepared baking sheet. Lightly spritz with cooking spray if using.
7. Bake 15–20 minutes until golden and browned. If any flatten, gently reshape while warm so they set into tot form.
Moisture is everything: squeeze the cauliflower very well and drain watery cottage cheese for the crispiest tots. For extra flavor, add 1/2 teaspoon garlic powder and a pinch of salt. Serve with ketchup, ranch, marinara, or a spicy mayo dip.
