Strawberry Oatmeal Bars are the perfect mix of chewy oats and sweet, juicy strawberries. These easy bars are great for breakfast, dessert, or snacking on the go.
4 cups fresh strawberries, hulled and diced
⅔ cup granulated sugar
Juice from half a lemon (about 1 ½ tbsp)
⅓ cup cornstarch
2 cups old-fashioned rolled oats
2 cups all-purpose flour
⅔ cup granulated sugar (for crust/topping)
1 ½ teaspoons cinnamon
14 tablespoons unsalted butter, room temperature
½ teaspoon salt
1 teaspoon vanilla extract
1. Preheat your oven to 350°F and grease a 9×13-inch baking pan. Line with parchment paper for easy removal.
2. In a bowl, mix strawberries with ⅔ cup sugar. Let sit for 10 minutes. Stir in lemon juice and cornstarch until well combined.
3. In another bowl, mix oats, flour, sugar, cinnamon, salt, and vanilla. Add butter and mix until crumbly.
4. Press ⅔ of the oat mixture firmly into the bottom of the prepared pan to form the crust.
5. Spread strawberry mixture evenly over the crust.
6. Crumble the remaining oat mixture over the top, squeezing some into clumps.
7. Bake for 35–40 minutes until golden and bubbling.
8. Cool in pan for at least 2 hours before slicing into bars.
9. Store in an airtight container or freeze with parchment between layers.
For gluten-free bars, use certified GF oats and substitute almond or oat flour. Bars keep at room temperature for 3 days or in the fridge for up to a week. Reheat in the oven at 300°F for a crisp texture.
