Smashburger Quesadillas combine juicy caramelized beef, melty cheese, and crispy tortillas into the ultimate comfort food fusion.

Ingredients

500g beef mince (with some fat)

2 tsp paprika

1 tsp garlic granules

1 tsp onion powder

1 tsp dried oregano

4 flour tortillas (small/medium)

8 slices cheddar or American cheese

1 large tomato, sliced

1 baby gem lettuce, chopped

30g sliced gherkins (pickles)

½ red onion, thinly sliced

4 tbsp burger sauce

Optional: 3 caramelized onions

Instructions

1. Place beef mince in a bowl and mix with paprika, garlic, onion powder, and oregano.

2. Divide beef into four portions and press each onto a tortilla in a thin layer.

3. Heat a non-stick pan to medium, spray oil, and place tortilla beef-side down. Cook 3–4 minutes.

4. Flip carefully. Wipe pan if needed. Reduce heat.

5. Top each with cheese, onion, tomato, pickles, and burger sauce. Add caramelized onions if using.

6. Let cheese melt, then fold tortilla in half. Press gently.

7. Cook 1–2 more minutes until cheese melts and tortilla crisps. Slice and serve.

Notes

Don’t overwork the beef to keep it tender.

Use a dry pan for best crunch.

You can freeze uncooked assembled quesadillas up to 2 months.
