A vibrant, one-skillet chicken dish featuring tangy cranberries, zesty orange, and juicy chicken—perfect for holidays or quick dinners.

Ingredients

2 pounds chicken thighs or breasts, bone-in or boneless

Salt and black pepper, to taste

1 tbsp olive oil

1 tbsp unsalted butter

1 cup fresh or frozen cranberries (or whole berry sauce)

½ cup orange juice (fresh or not from concentrate)

1 tbsp orange zest

2 cloves garlic, minced

½ cup chicken broth or stock

3 tbsp pure maple syrup or honey

¼ tsp paprika

Optional: orange slices, fresh thyme or parsley

Instructions

1. Pat chicken dry and season with salt and pepper.

2. Heat olive oil and butter in a skillet. Sear chicken 4–5 minutes per side until golden. Set aside.

3. Add garlic to pan and cook 30 seconds. Stir in cranberries, orange juice, zest, and maple syrup.

4. Pour in broth. Return chicken to skillet and add paprika.

5. Cover and simmer on low for 20–25 minutes until chicken is fully cooked.

6. Uncover and simmer 2–3 minutes more to thicken sauce if needed.

7. Garnish with orange slices and herbs. Serve hot with sauce over rice or potatoes.

Notes

Store in fridge up to 3 days, or freeze for 2 months.

Reheat gently with broth or orange juice to loosen sauce.

Great with mashed potatoes, roasted veggies, or quinoa.
