3 lb beef chuck roast, trimmed

5 large yellow onions, thinly sliced

4 garlic cloves, minced

2 tablespoons olive oil

1 tablespoon unsalted butter

2 cups beef broth or stock

2 tablespoons Worcestershire sauce

1 tablespoon balsamic vinegar (optional)

1 packet French onion soup mix (about 1 oz)

1 ½ teaspoons kosher salt

1 teaspoon freshly cracked black pepper

1 teaspoon dried thyme (or 4 sprigs fresh)

2 teaspoons onion powder

1 bay leaf

2 tablespoons cornstarch (optional)

3 tablespoons water (for slurry)

Optional garnish: Fresh parsley, shredded Gruyère or Swiss cheese

Instructions

1. Season beef roast with salt and pepper.

2. Sear roast in olive oil and butter over medium-high heat until browned. Transfer to crock pot.

3. Sauté onions for 10–15 minutes until soft and golden. Add garlic and cook 1 minute. Deglaze with balsamic vinegar if using.

4. Layer onions and garlic over beef. Sprinkle soup mix, onion powder, thyme, and add bay leaf.

5. Pour in beef broth and Worcestershire sauce. Cover and cook on low 8–10 hours or high 4–5 hours.

6. Remove roast and shred or slice. If desired, whisk together cornstarch and water, stir into crock pot and cook on high 10 minutes to thicken.

7. Serve beef topped with onions, gravy, and optional parsley or cheese over mashed potatoes, noodles, or bread.

Notes

Refrigerate leftovers up to 4 days or freeze up to 3 months. Reheat with broth for best texture.
